I don't know if nephew Max and his girlfriend Violet celebrated differently in China, but here in Niskayuna, we gathered at the Pans' house to make dumplings to ring in the Chinese New Year on January 29. Patriarch Phil tells me they purchased 400 flour wrappers (about the size of a sand dollar), eight pounds of cabbage, and four pounds each of pork, shrimp, trumpet neck mushrooms and other vegetables. All the ingredients were mixed up in separate bowls when we arrived and the party guests just had to wash their hands, dip a finger into a bowl of water, wet the inside rim of a dumpling wrapper, drop a dollop from one of the bowls in the center of the wrapper, then fold and crimp. Phil kept two oiled pans going and one big steamer. By the end of the festivities, there were just a few dozen leftovers.
